Whole Wheat Pasta with Kale


Serves 4

2 tablespoons Extra Virgin Olive Oil
2 or more large garlic cloves
1 teaspoon each fresh oregano and basil (sliced into ribbons)
2 cups chopped kale without the stems
2 green onions (chopped)
½ cup pine nuts
2-3 cups cooked pasta
Salt and pepper, grated parmesan


  1. In a large sauté pan, cook garlic and green onion in oil for about 3 minutes, add pine nuts and cook until slightly browned.
  2. Add the kale and sauté for 4 minutes, add the herbs.
  3. Add the pasta to the pan and toss together.
  4. Add salt and pepper to taste and sprinkle with parmesan cheese.
