Summer Tomato Tart
4 large, ripe tomatoes (any color or kind is fine) (sliced)
10 large basil leaves (thinly sliced)
½ cup chopped scallions
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
½ cup mayonnaise
¼ cup bread crumbs
1 prepared frozen pie crust (baked)
Salt & pepper
- Sprinkle tomatoes with salt & pepper and lay in a colander to drain for at least 10 minutes.
- Layer the tomatoes, green onion and basil in the baked pie shell.
- Mix the cheese and mayonnaise together and spread over the tomatoes.
- Sprinkle the bread crumbs evenly over the top and bake at 350 degrees for 30 minutes until melted and browned.
