Summer Tomato Tart


Serves 6

4 large, ripe tomatoes (any color or kind is fine) (sliced)
10 large basil leaves (thinly sliced)
½ cup chopped scallions
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
½ cup mayonnaise
¼ cup bread crumbs
1 prepared frozen pie crust (baked)
Salt & pepper


  1. Sprinkle tomatoes with salt & pepper and lay in a colander to drain for at least 10 minutes.
  2. Layer the tomatoes, green onion and basil in the baked pie shell.
  3. Mix the cheese and mayonnaise together and spread over the tomatoes.
  4. Sprinkle the bread crumbs evenly over the top and bake at 350 degrees for 30 minutes until melted and browned.
